We tell the story of each cut. From pasture to our counter, every joint, chop and fillet is the result of honest relationships with local farmers, traditional methods, and respect for the craft of butchery.

We work closely with a small number of trusted suppliers, selecting only the highest quality animals, reared responsibly. Many of our cuts are dry-aged on site, matured to bring out the rich, natural flavour that sets our offering apart.
